Brawny Beef Stew

If you want a hearty and healthy meal this time of year that warms your belly instead of expanding it, then I got you covered with very little effort required.

Plus, this recipe got a thumbs up from our 2 year old daughter. Win! Win!

With this recipe it don’t get much easier than throwing some meat and veggies in a pot, walking away and coming home to a savory supper full of high quality protein and finely cooked fresh vegetables.

Brawny Beef Stew

Ingredients

  • 2 pounds lean stewing beef, cut into 1 inch cubes
  • 1/4 cup whole wheat flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 onion, chopped
  • 1 1/2 cups beef broth
  • 3 red skin potatoes, diced
  • 4 carrots, sliced
  • 1 stalk celery, chopped

    Directions:

  1. Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  2. Cover, and cook on Low setting for 8 hours or on high for 4 hours. Remove bay leaf before serving.
